Food & Beverage Manager
Lutsen Mountains is searching for a detail-oriented, organized, and professional individual to join our team as the Food & Beverage Manager. The primary responsibility of the Food & Beverage manager is to oversee all kitchen operations as well as inventory for the beverage department which includes the services at the Summitt Chalet, Rosie's, Papa Charlie's Tavern, Legend's Restaurant, and any outlying area in which food or beverage is served. This position will work closely with the MFSR (Midwest Family Ski Resorts) F&B Director/Granite Peak Head Chef.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Supervision
- Hire, train, and supervise all kitchen staff responsible for handling and preparing food for
customer consumption.

- Ensure food is prepared, portioned, and cooked to proper health code standards
- Maintain a safe and efficient kitchen through equipment management and cleanliness.
- Model, lead, and support safety programs.
- Stay current with guest and employee health and safety regulations,
- Maintain a daily checklist and report for food quality and portions.
- Be present and handle guest services issues and complaints that may arise
- Coordinate and cooperate with other departments daily
- Act as Executive/Head Chef
- Administration
- Manage daily schedule for personnel and coordinate with administration on estimated attendance levels for proper coverage
- Order food & beverage supplies, ingredients, and products and maintain an inventory that can be stored and kept fresh appropriately.
- Develop & assist the MFSR F&B Director/Granite Peak Head Chef with menu builds, and proper food pricing to drive revenue
- Ensure departmental compliance with the Employee Handbook and Guest Services procedures including dress code and behavioral standards
- Develop training manuals and standards with the MFSR F&B Director/Granite Peak Head Chef
- Review food and beverage-related accidents and ensure that all documentation is handled appropriately and timely
- Attend weekly staff meetings and liaison with Lutsen Management for various needs for other departments and/or events
- Communicate, manage & authorize payroll through the “When I Work” Scheduling Program
- Monitor the payroll process to ensure accuracy and timeliness
- Communicate professionally and courteously with guests and employees in person, through email, and over the phone to be sure that any
- Beverage Operations
- Order and inventory all kitchen-related beverage products
- Develop & assist with beverage profiles to meet customer demands, seasonal availability,
and variety.
- Events Catering
- Wedding and other event catering needs as they develop.

QUALIFICATIONS
- Minimum of 4 years experience in the hospitality industry, with an emphasis on food and beverages.
- High school diploma, GED or vocational training, or job-related course work required
- Culinary or food service management degree preferred
- Must be a team player
- Written communication and basic knowledge of website, payroll programming, and general office suite of programs
- In-depth knowledge of the food industry.
- Ability to adhere to budgets and meet financial targets
- Exceptional organizational, leadership, problem-solving, and communication skills
- Ability to forecast food and beverage needs
- Excellent customer service skills
- Great delegation skills
STARTING WAGE
$75,000-$85,000 + bonus based on key performance metrics
